A tunnel freezer is a straight, insulated freezing tunnel through which product is transported on a conveyor belt while cold air is circulated around the product to freeze it. The belt enters at one end, travels the length of the tunnel, and exits at the other end — the product is frozen continuously during the pass. The tunnel length (10–50m or longer) and belt speed determine the residence time; the refrigeration capacity and air temperature determine the freezing rate. Tunnel freezers are used for a wide range of food products where individual pieces require freezing without tumbling or stacking: fish fillets and portions, meat cuts, processed poultry, vegetables, bread and bakery products, ice cream bars, and fish blocks. Multi-belt tunnel freezers use multiple conveyor belts in series or stacked — the product moves between belts (falls from one level to the next), which also provides gentle tumbling to prevent pieces sticking together. This is particularly useful for vegetables and other small products that benefit from some agitation to prevent stacking.

What is a fish block freezer and how does it differ from an IQF tunnel?
A fish block freezer (or plate freezer used for blocks) produces solid frozen blocks of fish pieces, fillets, or minced fish by pressing the fish mass in a mould between metal freezing plates. The plates are cooled by refrigerant circulating through them, freezing the fish block solid. This is a batch process producing uniform rectangular blocks. A tunnel freezer, by contrast, freezes individual fish pieces or fillets on a conveyor belt without forming them into blocks — the individual pieces remain separate after freezing. Fish blocks are used as an intermediate product for subsequent processing (cutting into portions on a band saw) or for commodity export. IQF tunnel or spiral freezing of individual pieces is used for premium retail or food service portions.
What defrost cycle is needed on a tunnel freezer?
As a tunnel freezer operates, ice and frost from the food product and from moisture in the intake air accumulate on the evaporator coils and on the interior surfaces, reducing the efficiency of the refrigeration and eventually blocking the airflow. Regular defrost cycles are required to remove this ice buildup. Common defrost methods include: hot gas defrost (hot refrigerant gas is briefly redirected through the evaporator coils to melt the ice — fast and effective; the freezer is typically taken offline for 30–90 minutes); warm water defrost (warm water sprays over the evaporator coils); and electric defrost (electric heating elements melt the ice). The defrost frequency and duration must be planned into the production schedule. Modern tunnel freezers are designed for quick, efficient defrost cycles to minimise production downtime.
