Fish skinning machines remove the skin from fish fillets to produce skinless fillet products for retail and food service. The standard industrial fish skinning machine uses a feed roller (a knurled or roughened roller that grips the fillet skin-side down) and a thin, fixed blade positioned at the nip between the feed roller and a smooth pressure roller. The fillet is placed skin-down at the entry, the feed roller grips the skin and pulls it through the nip while the blade separates the skin from the fillet flesh — the skinned fillet exits on top, and the skin is removed underneath. The quality of the skinned fillet — the closeness of the cut to the skin–flesh interface and the amount of flesh remaining on the skin (the 'skinnery waste') — depends on the blade gap, the blade angle, the roller pressure, and critically the fish temperature and the consistency of the fillet thickness. Chilled fillets (at 0–4°C) skin more cleanly than warm fillets. Some machines include automatic thickness sensing and blade adjustment.
Frequently asked questions
How is skinning yield measured and what affects it?
Skinning yield (the proportion of the fillet weight that ends up as skinned fillet, rather than being lost as flesh on the skin waste) is the key economic parameter for a skinning machine. A well-adjusted skinner on good-quality, consistently-sized fillets at the correct temperature will leave minimal flesh on the skin. Factors that reduce skinning yield include: fillet temperature too warm (flesh becomes soft and clings to the skin); inconsistent fillet thickness (the fixed blade setting cannot optimise for both thick and thin areas simultaneously); damaged or irregular skin (tears allow the machine to lose the grip on the skin, causing the blade to cut into the flesh); and worn or incorrectly set blades. Request a skinning trial on your specific fish species, size range, and fillet condition before specifying a machine.
Is skinning always done after filleting?
For most round fish (salmon, cod, haddock, tilapia), the standard sequence is: scaling → gutting → filleting (produces skin-on fillet) → skinning (produces skinless fillet). Skinning is always done on the fillet after the bone structure has been removed, because the filleting machine requires the skin as a structural element to hold the fillet together during the filleting pass. Some specialty applications produce skin-on fillets for the smoked salmon market or for retail skin-on portions, in which case the skinning step is omitted. Confirm your target product specification before finalising the processing line layout.
