Proofing is the final fermentation stage before baking, during which shaped dough pieces rest at controlled temperature and humidity, expanding to the target volume through yeast fermentation. Industrial proofers maintain precise temperature (typically 35–40°C) and relative humidity (typically 80–90%) to achieve consistent, reproducible dough rise across all production runs. Types of industrial proofers include: tunnel proofers (a conveyor carries tin-loaded moulds through a long heated, humidified tunnel — standard in high-volume bread production), which are matched in length and speed to the line throughput; rack proofers (a bank of roll-in rack trolleys in a closed proofing cabinet — common for rolls, baguettes, and artisan bread); retarder-proofers (programmable units that first retard (cool) the dough to halt fermentation, then automatically switch to proofing at the set time — enables overnight dough preparation for early-morning baking without manual intervention); and industrial automatic conveyorised proofers (3D spiral systems) that minimise the floor footprint of the proofing stage. Humidity control in the proofer is critical — insufficient humidity causes a dry skin to form on the dough surface before baking, which restricts oven spring and produces a dense, blistered crust.
