Coconut oil processing — methods and equipment
Coconut oil is produced by two distinct routes: dry processing (from copra) and wet processing (from fresh coconut). Dry processing: fresh coconut flesh is dried to produce copra (dried coconut meat, typically 5–8% moisture) before oil extraction by screw press. Copra contains approximately 60–65% oil. Crude copra oil (CCO) is of variable quality and colour (copra drying conditions greatly affect quality) and requires full RBD refining before use as food-grade RBD coconut oil. Wet processing (virgin coconut oil or VCO): fresh coconut milk, extracted by shredding and pressing fresh coconut meat, is processed without heat to separate the oil from the aqueous fraction. VCO production methods include: chilling (refrigerating the coconut milk until the oil separates from the aqueous phase); enzymatic treatment (adding protease or amylase to break down the protein-oil emulsion); centrifugal separation; and fermentation methods. VCO is not refined — it retains the natural coconut flavour and aroma. RBD coconut oil (from copra) is odourless and flavourless, with a high lauric acid content and is the standard for industrial food uses (confectionery, biscuit fats, snack coatings).
Frequently asked questions
What is the difference between virgin coconut oil and RBD coconut oil?
Virgin coconut oil (VCO) is extracted from fresh coconut without heat or chemical refining, retaining natural coconut aroma, flavour, and colour (pale yellowish or clear). It is marketed as a premium product for direct consumption, health food, and cosmetic uses. RBD coconut oil (Refined, Bleached, and Deodorised) is produced from copra (dried coconut) and is fully refined to remove colour, free fatty acids, and the coconut aroma, producing a neutral-flavoured, white solid fat. RBD coconut oil is the standard for industrial food uses (chocolate coatings, biscuit fats, non-dairy creamers) where the neutral flavour is required. The two products come from different raw materials (fresh vs dried coconut) and use entirely different processing routes.
What quality issues are associated with copra-based coconut oil?
Copra quality is highly variable and directly affects crude oil quality. Poorly dried or stored copra is susceptible to mould growth (including aflatoxin-producing Aspergillus species) and to hydrolytic rancidity (free fatty acid build-up from lipase activity). High FFA in crude copra oil increases the neutralisation loss in refining and reduces yield of refined oil. Aflatoxin contamination of copra is a food safety concern — monitoring incoming copra and crude oil for aflatoxin is important. Buyers establishing a copra-based coconut oil refinery should assess the quality consistency of their copra supply chain and the refinery's designed capacity to handle high-FFA crude oil before committing to the plant specification.
