What is chocolate tempering and why does it require a machine?
Chocolate tempering is the process of heating and carefully cooling chocolate to specific temperatures to ensure that cocoa butter crystallises in the correct stable crystal form (Form V polymorphic crystal). Properly tempered chocolate has a glossy surface, a clean snap, and does not bloom (develop white fat streaks) during storage. Incorrect tempering (under-tempered or over-tempered chocolate) produces dull, soft, or sticky chocolate that blooms rapidly. An industrial chocolate tempering machine automates the heating, cooling, and agitation cycle to precisely and consistently produce correctly tempered chocolate — manual tempering is not reliable at production scale. Industrial continuous tempering machines handle several hundred to thousands of kg of chocolate per hour.
