A dough rounder takes the irregularly shaped dough pieces produced by the divider and shapes them into smooth, round balls — a critical step before intermediate proof and final moulding. Rounding seals the cut surfaces of the divided dough, develops a smooth skin, and begins to orient the gluten structure for subsequent moulding. In a conical dough rounder (the most common type), the dough piece is placed on a rotating conical bowl with a fixed spiral guide. The piece rolls up the spiral track, being turned and squeezed by the bowl surface and guide, developing a smooth ball shape by the time it exits at the top. Belt rounders (dough piece rolls between two moving conveyor belts at a slight angle) are used in high-speed lines for smaller rolls and buns. Correct rounding intensity is important — under-rounded pieces develop uneven structure and poor oven spring; over-worked pieces can stick, tear, or have a tight skin that restricts proofing. All dough-contact surfaces must be properly flour-dusted to prevent sticking.

On a full industrial tin bread (sandwich bread) line, the sequence is typically: divider → rounder → intermediate proofer → moulder → final proofer → oven. The rounder is needed before the intermediate proof to develop the dough surface and give the piece a consistent shape for entry into the moulder. On simpler small-scale lines or for some artisan loaves, the divider-to-moulder sequence may be used without an intermediate rounder and proof, but this generally produces a less consistent crumb structure and may result in a denser or less well-developed loaf. For roll and bun production, the rounder produces the finished round shape — moulding is not required.
How is flour dusting managed on a dough rounder?
Excess flour applied to prevent sticking during rounding affects the finished bread — it dilutes the recipe, affects crust colour, and can produce pale, floury patches on the loaf. Industrial lines use controlled flour dusters (rotary brush or air-jet dusters that apply a measured quantity of flour) rather than manual hand-dusting. The flour used should be the same grade as the production flour. Excess dusting flour that falls off the dough pieces can accumulate in the equipment and on the floor — it is a fire and dust explosion hazard in high concentrations and must be cleaned up regularly. A dust extraction system over the rounding area is standard on modern industrial bread lines.
