Industrial cooking kettles are jacketed cooking vessels in which food product is heated by steam or hot water circulating through the double-wall jacket surrounding the vessel. This indirect heating method (unlike direct-fire heating) gives uniform, controllable heating without hot spots or direct flame contact with the product.
