Industrial meat grinders use a worm screw to convey meat through a grinding plate with holes of a specified diameter (plate size), producing minced meat of a defined coarseness. Standard configurations include a pre-breaker plate (to reduce large pieces), a cutting blade, and a grinding plate. A second grinding stage with a finer plate produces a finer mince. Grinder capacity is rated in kg per hour and depends on the plate diameter, motor power, product temperature, and fat content. Standard commercial grinders in butcheries and small plants are typically rated from 300 kg/h to 2,000 kg/h. Industrial continuous grinders in large sausage and minced meat factories may process from 3,000 to 10,000 kg/h or more. Frozen meat grinders are designed with reinforced screws and plate configurations to handle partially frozen or fully frozen boneless trimmings without thawing, a major operational advantage for high-volume frozen minced meat production.
Buyer guidance for meat grinders
Before requesting a quotation, specify: (1) meat species (beef, pork, lamb, chicken, mixed); (2) product temperature — fresh/chilled (below 4°C) or frozen (temperatures as low as -18°C for frozen grinders); (3) whether product is bone-in or boneless (standard grinders require boneless product; bone-in requires specific equipment and produces mechanically separated meat); (4) target grind plate hole diameter (mm) — coarse mince typically uses 8–12mm plates, fine mince 3–6mm; (5) required throughput in kg/hour; (6) continuous or batch operation; (7) integration with mixer, stuffing line, or forming machine; (8) cleaning requirements and washdown specification.
