The palm oil milling process
Palm oil processing differs fundamentally from oilseed pressing. Fresh fruit bunches (FFBs) must be processed within 24–48 hours of harvest to prevent FFA increase caused by enzymatic activity. The milling sequence is: sterilisation — FFBs are cooked in steam sterilisers (batch horizontal sterilisers or continuous cage sterilisers) to deactivate lipase enzymes, loosen fruits from the bunch, and partially break down fruit cell walls; threshing — the sterilised bunches are passed through a thresher drum to separate individual fruits from the empty bunch stalk; digestion — the separated fruits enter a vertical steam digester that macerates the fruit pulp to release oil; pressing — the digested mash is pressed in a twin-screw or cage press to extract crude palm oil (CPO) and a water/oil/solid mixture (press liquor); clarification — the press liquor is diluted, heated, and settled in a clarification tank to separate CPO from sludge; drying and storage — the clarified CPO is dried and transferred to storage tanks. The press cake (nuts in fibrous shell) is passed through a nut and fibre separator; the nuts are cracked to recover palm kernels for palm kernel oil extraction.
Small-scale versus large-scale palm oil mills
Palm oil mills are available across a wide capacity range. Small-scale village-level mills processing 1–5 tonnes of FFB per hour use simplified equipment (hand-operated digesters, small motorised presses) with limited automation. Mid-scale mini-mills of 3–10 tonnes FFB per hour are common in smallholder production areas in West Africa and Southeast Asia. Large commercial mills process 30–90+ tonnes FFB per hour and use continuous sterilisers, automated threshers, large digesters and presses, continuous clarification, and integrated nut and fibre processing. The appropriate scale depends on the available FFB supply, the distance from plantation to mill (FFBs cannot be transported long distances before processing quality degrades), and the available capital. Oil extraction rates (OER) and kernel extraction rates (KER) are the key performance metrics for palm oil mills.
Buyer guidance for palm oil processing equipment
Before requesting a quotation, specify: (1) fresh fruit bunch (FFB) input capacity in tonnes per hour; (2) FFB ripeness standard and mesocarp oil content if known; (3) batch or continuous sterilisation preference; (4) target crude palm oil (CPO) quality (FFA, moisture, dirt); (5) whether palm kernel oil extraction is included in the scope; (6) effluent treatment requirements (palm oil mill effluent — POME — is a significant environmental concern and is regulated in most producing countries); (7) available utilities (steam supply or boiler, electrical supply, water supply); (8) available land area and building dimensions; (9) downstream refining requirements (is CPO sold direct to refiners or refined on-site); (10) installation, commissioning, and training support required. POME handling and treatment must be included in the project scope — untreated POME disposal is an environmental offence in Indonesia, Malaysia, Nigeria, and other major producing countries.

What is the difference between crude palm oil and RBD palm olein?
Crude palm oil (CPO) is the unrefined oil extracted directly from the mesocarp (flesh) of the palm fruit. It contains approximately 50% saturated fats (primarily palmitic acid), has a characteristic orange-red colour from high beta-carotene content, and has a distinctly sweet-fatty flavour. It is not suitable for most consumer cooking oil uses without refining. RBD palm olein is palm oil that has been refined (degummed, neutralised, bleached, and deodorised) and then fractionated to separate the liquid fraction (olein) from the solid fraction (stearin). RBD palm olein is the world's most widely consumed cooking oil, used in frying, food manufacturing, and retail bottled oil worldwide.
How quickly must fresh fruit bunches be processed after harvest?
Fresh fruit bunches should be processed within 24 hours of harvest and at most within 48 hours to prevent FFA levels rising above acceptable limits. Lipase enzymes in the fruit mesocarp are activated once the fruit begins to bruise and ripen further after harvest, rapidly hydrolysing oil to produce FFA. FFA levels above 5% significantly reduce the value of the CPO and increase refining costs. Mills should be sited close to producing plantations and should have sufficient steriliser capacity to process all FFBs harvested on the same day. Do not over-specify daily throughput based on peak harvest without confirming steriliser capacity matches that peak.
