Butter manufacturing process and equipment
Butter is produced from cream by churning — a mechanical process that inverts the cream emulsion (fat droplets in water) into a water-in-fat matrix. For industrial butter production, the process begins with cream separation (from whole milk using a cream separator), cream pasteurisation, cream ripening or ageing (holding cream at controlled temperature — sweet cream butter uses fresh pasteurised cream; cultured butter uses cream fermented with lactic acid bacteria), and then churning. Continuous butter makers (Fritz process) churn cream continuously in a cylinder, then work the butter to achieve consistent fat content, salt distribution, and texture in a continuous output. Batch churns rotate a closed cylinder at controlled speed, converting cream to butter granules, draining buttermilk, washing (optionally), and then working the butter. After churning, butter is moulded, wrapped (foil or parchment), and packaged. Salt is added during the working stage for salted butter. Anhydrous milk fat (AMF or butteroil) is produced by a further centrifugal process to concentrate the fat to 99.8% for industrial and export applications.
