Gummy candy production — process and equipment
Gummy candy (gummy bears, gummy worms, pectin jellies, gelatin fruit shapes) is produced by cooking a sugar-glucose syrup solution with gelatin (animal-derived) or pectin/starch (plant-derived vegetarian alternatives), adding colour and flavour, and depositing the liquid mass into moulds where it cools and sets to a soft, elastic texture. The two main moulding systems are: starch mogul systems (the candy syrup is deposited into impressions formed in trays of fine starch powder — starch acts as both the mould and absorbs surface moisture from the gummy during conditioning; after setting, the starch is removed and recycled; the classic system used for most commercial gummy production); and silicone mould systems (the candy syrup is deposited into silicone or thermoplastic moulds — no starch required, but conditioning still required; more capital-intensive but cleaner and easier to maintain). After moulding and conditioning (typically 24–48 hours), gummy pieces are demoulded, coated with oil or sanding sugar, and packed.
