What is the difference between flour extraction rate and flour yield?
Flour extraction rate (or flour extraction) is the percentage of clean wheat grain that emerges as white flour (as opposed to bran and wheat germ by-products). A 72% extraction rate means 72kg of flour per 100kg of cleaned wheat, with 28kg of bran and germ. A higher extraction rate (80–85%) includes more of the outer bran layers in the flour, producing higher-fibre flour with a darker colour. Flour yield is related but is affected also by the moisture content of the grain entering the mill versus the flour leaving it. Since grain is conditioned (wetted) before milling, moisture added during tempering is lost as bound moisture in the bran, and flour will be slightly drier than conditioned grain. The milling yield calculation — total flour output in kg per tonne of raw grain input — must account for this.
How long does it take to build and commission a medium-scale flour mill?
A medium-scale wheat flour mill (100–300 tonnes per day grain capacity) typically takes 12–18 months from project approval to first production. This includes: engineering and civil design (2–3 months); civil construction (4–6 months); equipment manufacturing and delivery (4–6 months — often concurrent with civil); mechanical and electrical installation (2–3 months); and commissioning and performance testing (1–2 months). The critical path is typically civil construction and equipment delivery. Delays in civil construction, especially in markets with building materials constraints, are the most common cause of project overrun. Allow adequate contingency in the project schedule.
