Coffee roasting machines — types and operation
Coffee roasting transforms green coffee beans into roasted coffee by applying heat that drives off moisture and induces complex chemical reactions (Maillard reaction, caramelisation, degradation of chlorogenic acids) that develop the characteristic roasted coffee flavour, aroma, and colour. The main types of industrial coffee roasters are: drum roasters (green coffee rotates in a heated rotating drum — heat transfer by conduction from the drum surface and convection from hot air; the most widely used roaster type for specialty and commercial coffee; available in batch sizes from 5 kg to hundreds of kg per batch, or as continuous drum roasters); fluid bed roasters (green coffee is suspended and roasted in a stream of hot air — faster roasting, more even heat distribution, less manual skill requirement than drum roasting; used in commercial and instant coffee production); and continuous roasters (large industrial roasters processing several tonnes per hour, used in commodity commercial roasting). All roasters must have exhaust ventilation, chaff collection, and (for gas roasters) appropriate combustion controls. Data logging for roast profile (time–temperature curve) is standard on commercial specialty roasters.
