Individual Quick Freezing (IQF) is the standard technology for producing free-flowing frozen food products — frozen peas, diced vegetables, berry fruits, prawns, fish pieces, and diced or minced meat that, once frozen, do not clump together and can be portioned from a bag. The two main IQF technologies are: fluidised bed IQF freezers (the product enters a chamber where a very high-velocity upward cold airflow suspends the product particles, separating and freezing them individually as they travel through the tunnel; works best for small, uniform, free-flowing particles — peas, diced vegetables, corn kernels, berries, shrimp, diced cheese; product exits as free-flowing frozen pieces); and IQF tunnel or spiral freezers with inter-piece separation (for larger or more irregular products that cannot be fluidised — cut green beans, sliced mushrooms, fruit segments, cooked pasta — a conveyor belt carries the product through the freezer with controlled spacing to prevent clumping). All IQF systems use refrigerants to produce the low-temperature circulating air (-30°C to -40°C). Ammonia refrigerant systems and modern HFO refrigerants are the primary options for new installations.

For a product to be successfully frozen in a fluidised bed IQF freezer, it must be: small enough and light enough to be lifted and suspended by the airflow (typical particle size up to approximately 20–30mm for standard fluidised bed systems, though bed gap adjustments allow some variation); free of excessive surface moisture (wet surfaces cause particles to stick together during fluidisation, forming clumps — blanching, centrifuging, or air-drying before the IQF freezer is standard to reduce surface moisture on vegetables); and reasonably uniform in size (a wide size range means fine particles freeze too fast while coarse particles are still soft — this affects product separation and the overall freezing quality). Large, irregularly shaped, or fragile products should be considered for tunnel or spiral IQF freezers rather than fluidised bed.
What refrigerant regulations should I consider for an IQF freezer purchase?
Industrial food freezers use refrigerants to produce the low-temperature air required for freezing. The EU F-Gas Regulation (517/2014) phases down the use of high-GWP HFC refrigerants including R404A (the most widely used HFC in food freezing) and restricts their servicing in new systems. In Europe, new large IQF freezer installations should use natural refrigerants (ammonia R-717, CO₂ R-744) or approved low-GWP HFO refrigerants. Outside Europe, the Montreal Protocol Kigali Amendment is phasing down HFCs in most major economies — check the regulatory timeline for your country. Ammonia is the standard refrigerant for large industrial IQF freezers — it has excellent thermodynamic efficiency but requires trained personnel and appropriate safety systems.
