Food roasting uses dry heat (without oil) to develop colour, flavour, and aroma through Maillard reaction and caramelisation of natural sugars. Industrial food roasting machine types include: rotary drum roasters (the product tumbles in a slowly rotating drum — heated by hot air blown through the drum, or by a gas burner heating the drum externally; suitable for nuts, seeds, coffee beans, cocoa beans, and grain); continuous belt roasters (the product passes through a heated tunnel on a mesh conveyor belt — suitable for flat products, thin pieces, and granular materials); horizontal batch roasters (fixed or oscillating flat roasting pans with bottom and top heat — for batch roasting of flatbreads, seeds, and small quantities); and fluidised bed roasters (hot air suspends the product particles and roasts them in the airstream — very even roasting; used for premium coffee and specialty roasting).
