A wheat flour milling plant produces white flour (and by-products — bran, germ, and wheatfeed) from tempered wheat grain through a series of controlled roller milling and sifting operations. The main sections of a wheat flour mill are: grain intake and storage; grain cleaning (pre-cleaner, aspirator, destoner, scourer, magnetic separator); tempering and conditioning (adding controlled amounts of water to the clean wheat and holding for 12–24 hours to toughen the bran and soften the endosperm for more efficient milling); first break (first roller mill — the break section opens the grain and begins to separate endosperm from bran); a series of break and reduction roller mill passages; plansifter (a multi-compartment flat sifter that classifies the milled material by particle size after each roller mill passage); purifiers (optional — aspirators over sieves that separate semolina from bran particles by air and screening); and flour mixing, fortification, and storage. The number of roller mill passages determines the throughput, extraction rate achievable, and quality of flour produced. A typical commercial flour mill for white bread flour uses 12–20 roller mill passages.
