A roller mill consists of two (or four in a double-roller mill) counter-rotating rolls through which grain or partially milled material (semolina, break stock) passes, being progressively reduced in particle size by the shearing and compressive action of the rolls. Roller mills are the central machines in modern wheat flour milling systems. Break rolls (corrugated rolls) receive the tempered wheat grain and progressively rupture the grain to release the endosperm from the bran layers without over-grinding the bran. Reduction rolls (smooth or fine-corrugated rolls) progressively reduce the endosperm particles (semolina and middlings) to the final flour particle size. A commercial flour mill requires multiple roller mill passages arranged in a milling diagram — the number of break and reduction passages determines the throughput capacity and the flour extraction achievable. Roller mills for grain milling are also used in other applications: animal feed manufacturing (flaking rolls for rolled oats; crimped rolls for whole grain feed); chocolate refining; and some sugar and spice applications.

How are roller mill rolls maintained and recorrugated?
Corrugated break rolls wear over time as the surface corrugations are progressively abraded by contact with grain. When rolls become too smooth (worn beyond a specified corrugation depth), they must be recorrugated — removed from the mill and reground to restore the corrugation profile on a roll grinding machine. Smooth reduction rolls also wear and may need regrinding or replacement. In a large commercial flour mill, roll regrinding is an ongoing maintenance operation. Maintaining a spare set of rolls in each size allows roll changes without stopping production. Roll-to-roll gap setting (gap between the two rolls) is critical for consistent flour quality and must be checked and adjusted regularly.
Do I need a roller mill or a hammer mill for my grain processing application?
For refined wheat flour production, roller mills are standard — they provide the precise particle size control needed to produce high-quality, consistent white flour. For maize meal production and grain grinding for animal feed, hammer mills are widely used because they are lower in capital cost, simpler to maintain, and produce output quality acceptable for those applications. For high-volume, high-quality maize meal production (super-refined meal), a combination of a degerminator, roller mill, and plansifter produces a better product than a hammer mill. For spice and dry ingredient reduction, roller mills provide better particle size control than hammer mills but are less common in small-scale applications. The choice depends on the product quality requirement, scale, and capital budget.
