A spiral freezer is a continuous food freezer in which product travels on a self-stacking conveyor belt that winds in a continuous helix (spiral) through a tall, compact insulated cabinet filled with circulating cold air. The spiral configuration allows a very long belt path (and therefore a long freezing time) within a small footprint — a spiral freezer of 5m diameter and 5m height may have 50–80m of belt path. Cold air is circulated either inside-out (from a central drum outwards) or top-down (from evaporator coils above the product). Spiral freezers are used for products that are too large, fragile, or irregular to fluidise — breaded fish fillets and portions, burger patties, fried chicken pieces, poultry joints, ready meal trays, bakery products, and cooked pasta dishes. Residence time in a spiral freezer is controlled by the belt speed — the faster the belt speed, the shorter the residence time and the less freezing time the product receives. For a given freezer at a given refrigeration capacity and air temperature, the minimum residence time needed to fully freeze the product at its thermal centre is fixed by the product thickness and the freezer conditions. If the belt is run too fast for the product thickness, the product surface is frozen but the centre is still soft — an incomplete freeze that is both a food quality and food safety problem for products intended to be sold frozen. The correct belt speed for each product type must be validated by inserting temperature probes into the thermal centre of the product and confirming that the centre reaches the target frozen temperature (typically -18°C) before the product exits the freezer.
What is the difference between a spiral freezer and a tunnel freezer?
A spiral freezer and a straight tunnel freezer both achieve continuous food freezing on a conveyor belt, but their physical configuration differs: a tunnel freezer is a straight, long insulated tunnel (typically 20–50m long) with the conveyor belt running straight through; a spiral freezer winds the belt into a helix, achieving the same belt path length in a much smaller footprint.
