For orthodox black tea: leaf weighing and withering (on withering troughs with air forced through the leaf mass until target moisture is reached); rolling (orthodox rolling machines in multiple stages with roll-breaking between stages); fermentation (the rolled leaf mass is spread on fermentation tables or conveyed through a fermentation tunnel — temperature and humidity controlled — until the target degree of oxidation is achieved); drying (continuous trough dryer — the fermented leaf is fired at high temperature to halt fermentation and dry to the target moisture); sorting (vibrating screens, fibre extractors, and colour sorting to produce finished grades); weighing and packing. What water supply requirements apply to a black tea factory?
Black tea manufacturing has relatively modest water requirements compared to some food industries — the primary use of water is in boiler feed for steam generation (used for CTC fermentation, steam jacketed equipment, and heating), and in cleaning and sanitation of equipment. Unlike green or fruit processing operations, the tea leaf itself is not washed with water during processing. Clean water (free from high iron content, which discolours tea) must be available for boiler feed. The drying process generates large volumes of moist, hot exhaust air — no water is required for the drying process beyond the boiler. Confirm the water quality specification with the machinery supplier, as high iron or mineral content can cause staining and scaling of equipment.
