Syrup preparation is the upstream stage in soft drink and flavoured beverage production where the concentrated flavour, colour, and sweetener blend is prepared before dilution with treated water and carbonation or pasteurisation. The process involves two stages: simple syrup (sugar syrup) preparation — dissolving crystalline sugar in treated water at elevated temperature (typically 80–85°C) to produce a clear, sterile syrup at a specific Brix (typically 60–65°Brix); the hot simple syrup is hot-filtered to remove impurities and then cooled before use. Compound syrup preparation — blending the cooled simple syrup with concentrated flavours, colour, acid (citric or phosphoric), preservatives, and other active ingredients in a compound syrup vessel to produce the finished beverage syrup concentrate. Compound syrup is stored chilled and is the input to the beverage proportioning/carbonation stage. CIP-compatible stainless steel vessels with jacketed heating and cooling and top-mounted agitators are standard for syrup preparation. Automatic sugar dissolution systems weigh water and sugar automatically and dissolve at controlled temperature, eliminating manual weighing errors.
