An industrial bread slicer uses a bank of oscillating blades to slice a cooled, pre-baked loaf into parallel slices of a specified thickness simultaneously. The loaf is fed through the slicer either by gravity (the loaf drops onto an inclined plate and is pushed through the blade bank by a reciprocating pusher) or on a conveyor (high-speed inline slicers on automated bread lines). Key parameters in bread slicer selection include: loaf length range and width range the slicer can handle; slice thickness (standard sandwich bread is 10–13mm per slice — specifying a range allows multi-product operation); number of blades per pass (determines how many slices are cut simultaneously); slicer speed in loaves per minute; blade type (reciprocating flat blades vs circular blades — reciprocating blades are standard for sliced pan bread); crumb collection and hygiene design; blade guard design and safety interlocks; and compatibility with the packaging machine downstream. The bread slicer must be positioned after the cooling conveyor or spiral cooler — slicing bread that is too warm results in compressed, misshapen slices and accelerates mould growth.

At what temperature should bread be sliced?
Bread should be cooled to a core temperature below 35°C — and ideally below 30°C — before slicing. Slicing warm bread compresses the crumb structure, producing a poor slice shape and a sticky cut surface. Warm sliced bread packaged in sealed film bags is also prone to accelerated mould growth, as condensation forms inside the bag as the loaf continues to cool. Measuring the core temperature of the loaf with a probe thermometer before it enters the slicer is a standard quality control step.
