A fully automatic industrial bread production line integrates each stage of bread production in a continuous sequence. Ingredient dosing and handling systems feed weighed quantities of flour, water, yeast, salt, improvers, and fats to a continuous mixer (for highest throughput) or a batch spiral mixer bank with automatic dough transfer. The dough is then processed through a divider (to cut precise weight portions), a rounder or pre-moulder (to shape portions before intermediate proofing), an intermediate proofer (to rest dough portions before final moulding), a moulder (to give loaves their final cylindrical shape and develop dough structure), a final proofer (a controlled-humidity and temperature chamber where loaves rise to the desired volume), and a tunnel oven. After baking, loaves are depanned (removed from tins) by an automatic depanner, then cooled on a spiral or tower cooler to below 35°C before slicing and packaging. Automatic bread slicers cut the cooled loaf to a specified slice thickness; automatic bagger or flow-wrap machines seal the sliced loaf in packaging.

Before requesting a quotation, specify: (1) target product (sliced sandwich bread, unsliced tin loaf, rolls, burger buns, toast bread, or other); (2) target loaf weight (typically 400g, 500g, 600g, 800g, or 1kg); (3) required output in loaves per hour or tonnes per day; (4) degree of automation — semi-automatic (manual depanning, manual loading) vs fully automatic; (5) oven band width (this determines throughput per metre of oven and affects the entire line width); (6) proofing method (proofer integrated in line vs separate proofer rooms); (7) cooling method (linear conveyor, tower cooler, or spiral cooler — spiral coolers save floor space but require ceiling height); (8) whether slicing and packaging is in scope; (9) available floor length and ceiling height; (10) available utilities (gas or electric for oven, electrical supply, steam, compressed air); (11) baking tin standard (supplier's standard tins or integration with existing tins); (12) CE or other certification requirements.
